I'd volunteer, but I have a grand total of 2 games under my belt, so I doubt I'd give you much of a fight...
If that doesn't matter, then I'd happily play you.

Why don't we just try a standard continents map (2 continents, 6AI (3 on each continent with one of us))?
All victory conditions enabled. All default settings in the set-up screen, EXCEPT: Culture flipping after conquest ON (default is off). Can I be Catherine?

BTW: What level do you want?
I must confess that the highest level I've played so far was noble. But that was pretty easy. If we can get a decent-to-good start, I'd say we should play at least prince/monarch.
