The idea is that if you go with just three cities you'll have a guaranteed cultural victory; that is, if you manage to win before the AI does. The AI doesn't perceive culture as a threat, so all you have to do is to keep them from killing you. This is easy on a small continent or archipelago, as you'll only need a couple of ships. The key in civ5 SP is optimising cash flow, and keeping a low number of cities (and a small road network) certainly doesn't hurt that, especially in the beginning.

Of course there are other ways to get filthy rich (mainly involving buying mercantile CS and turning your huge population into specialists), but by doing so you'll cut off the option of a cultural victory and access to social policies. I think that when you're new to the game, this is confusing: the game is presenting you with seemingly valid gameplay options, yet you are to ignore them. OTOH, on prince it doesn't really matter what you do

You don't need G&K. If you want to learn how the game works, less options might be better than more options. I'd just start a game with a random civ and see where you end up. You could post a walkthrough, then we can laugh at errrr I mean give advice.

After your first game you can always see if you want G&K. G&K is fun, there are new mechanics and civs. It doesn't change the game fundamentally (as in, everything revolves around gold), but religion is just funny. It does make the game easier though (as there's an additional way to get gold/science/culture).
