To add to barbu's answer :

When we say "J'aime le fromage", it means I like cheese in general, ie. any kind of cheese, except Gouda. Cheese here is a concept.
When we say "Je voudrais du fromage", it means I'd like some cheese in particular, but probably not some Gouda. Cheese here is some food I'm about to eat.

See ? It's not strange, only Gouda is strange. You have some brighter type for yourself, and some darker type for exportation (memories from vacation in Holland a long time ago, on a Gouda special market).
