I'm player two. I'll take the Iroquois.
For purely dorky aesthetic purposes, could you replace the actual word "Iroquois" with "Haudenosaunee, ", and make me that nice dark green color that the Aztecs usually are?
Identical 21 square starts would be nice. That's what he means by "starts as fair as possible". It's totally cool to make the starts relatively unfair by giving us cows and forests with game and bonus grassland and gold and luxuries galore, as long as we both have them. And being by a river is almost necessary.

I haven't ever made a made before, but I may be willing to "give back" and give it a go. I have sort of looked through the map making stickied threads, but are there any points in particular that are important? Any tricks that make things easier?

Well, whatever's easiest for you is fine. I would prefer identical continents, but I don't care much. I really have no idea how much work that entails. If it's a significant amount, than forget about it, honestly. I don't suppose the editor has anything like a copy/paste function. . .
How do you mean "make getting it fair"? Remove Ivory as a requisite for building?

I still have not started yet and may not be able to for a couple of days. I expected to get through some of my work faster, but I have also been looking for a job, so time is somewhat limited. If anyone else can make it, feel free to step in. If not, I'll still do it, but it may be awhile before it gets finished.

I'll take it. Not being the fastest mapmaker allow me a couple of days.

Are you sure you want a large map? Large maps take more time than standard maps to play and it would be a pity if you stop during the game for that reason.
